Seasonal kaiseki at Ryokan Omori

Cuisine

Creative Kaiseki Crafted with Gunma’s Finest Ingredients

Our kaiseki cuisine is inspired by the rich seasonal bounty of Gunma. Every dish begins with carefully selected local ingredients, thoughtfully prepared to bring out their natural flavors.

Ryokan Omori works closely with farmers and producers throughout Gunma Prefecture, serving fresh ingredients at their seasonal best.

For us, local ingredients are more than a choice—they are our way of sharing the beauty of each season and the character of Gunma with every guest.

Carefully Selected Local Ingredients

Hanayukari Rice from Nakanojō, Gunma

The rice served at Ryokan Omori is Hanayukari, a premium Koshihikari rice grown in Nakanojō, Gunma.

Hanayukari is a carefully selected local brand of rice that meets exceptionally high standards. Only first-grade Koshihikari, certified under Japan’s official agricultural inspection system and achieving a taste score of 80 points or higher out of 100, is eligible. Each batch comes from a single rice variety, farmer, and harvest year, ensuring consistent quality and flavor.

Our rice is grown by Mr. Isao Motoyama in the Nakuta district of Nakanojō. He has twice received the Grand Prize (Gold Award) at the Nakanojō Delicious Rice Competition, including at the 7th and 9th editions.

A Message from Our Executive Chef

Japanese cuisine is deeply connected to the changing seasons. Every ingredient has its own character, its own fragrance, and its own moment. My role as a chef is not to overpower those qualities, but to respect them and bring them gently to the table.

If our cuisine allows you to slow down, forget the pace of everyday life, and experience the beauty of Japan’s seasons, then we have achieved what we hope to share. We believe every meal is a unique encounter, deserving our full care and attention.
